In the summer of 2007 the US government created the "Virgin Cane Rum" category specifically for Beija.
The sugarcane used to created Beija is hand-harvested, only using a certain part of the stalk, it is single-pressed, and single distilled. The entire process, from harvest to the beginning of distillation takes place on the same day (or within 10 hours at most). As such, we have ensured that the sugarcane juice used in Beija enters distillation in its purest, virgin form.
